This is an easy and healthy bowl that can easily be prepared at the beginning of any week and enjoyed throughout!
I absolutely love this recipe that is very easy to prepare with little preparation and can be easily scaled up to be meal prepped and eaten throughout the week.

This recipe is my go-to when I am looking to prepare a meal that not only has amazing flavor but also has an abundance of nutrients that will fill you up and keep you energized throughout the day. I came up with this recipe by first preparing the BBQ chickpeas and wanting something besides a basic wrap, so I made some purple rice and from there I looked around my kitchen for every color possible to add to my bowl that would also enhance the taste. This is the recipe I've settled with but please don't hesitate to add your own beloved ingredients to have your own spin on the dish.
Ingredients
1/2 cup Purple Rice
1 sweet potato
¾ cup mushrooms
1 can of chickpeas
3 tablespoons of BBQ sauce
1 cup of kale
¼ cup Pickled Red Onion
¼ cup Fermented Cabbage
1 fresh tomato
Handful of carrots
Seasonings: Onion powder, pepper, & whatever else fits your taste
Directions
Make purple rice.
Cut up sweet potatoes and put them in an oven or air fryer until toasted.
Prepare chickpeas with BBQ Sauce and onion powder in pot on the stove and mash the chickpeas to your preferred consistency.
Combine mushrooms and kale in pan with some oil and seasonings
Add cooked food to bowl: rice, chickpeas, roasted sweet potatoes, and kale & mushroom blend
Add raw veggies: red onion, cabbage, carrots and anything else you have around and think would be a yummy addition.
